I saw this recipe on This Mommy Cooks a week or so ago! It was one of those recipes that as soon as I saw what it was and looked at the scrumptious picture, I was dying to make it. Tonight we are getting together with our neighbors to watch some UT football, so I figured now was as good a time as any to make these simple and sweet dessert. Strawberries are fairly easy to come by and are at a reasonable price right now, so it's the perfect season to try this out.
Strawberry Pie
1 refrigerated pie crust, baked in a pie plate as directed
5 cups of fresh strawberries, sliced
1/2 cup water
1/2 cup sugar
3 tablespoons corn starch
3 ounces of cream cheese, softened (I used low fat)
Directions: Bake pie crust as directed, then allow to cool slightly. In a medium saucepan, combine water, sugar, corn starch and strawberries. Cook over medium-high heat until bubbly, then lower temperature to a simmer until the sauce has thickened, approximately 10 minutes. Remove from heat. Spread softened cream cheese on bottom of pie crust. Pour strawberries over cream cheese. Refrigerate for several hours. Serve with whipped cream or ice cream.
