Zucchini-Chocolate Chip Muffins

We were given some garden fresh zucchini last week, and with so much on hand I decided to try these delicious muffins.  My kids loved helping me make them, and they devoured these tasty muffins without even realizing the zucchini inside.  What a great & sneaky way to get more veggies in!

Zucchini-Chocolate Chip Muffins

Ingredients:

1.5 cups flour (I used whole wheat all-purpose)
3/4 cup sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 egg, slightly beaten
1/2 cup vegetable oil
1/4 cup milk
1 Tablespoon lemon juice (I didn't have this on hand so I used a splash of orange juice)
1 teaspoon vanilla extract
1 cup shredded zucchini
1/2 cup semi-sweet chocolate chips (I used the mini-sized chips)

Directions:

In a bowl, combine flour, sugar, baking soda, cinnamon, and salt.  Combine the egg, oil, milk, lemon juice, and vanilla; mix well.  Stir into dry ingredients just until moistened.  Fold in zucchini and chocolate chips.  Fill greased or paper-lined muffin tins 2/3 full.  Bake at 350 degrees for 20-25 minutes.  Makes 12 muffins.

***To shred the zucchini, I cleaned the vegetable and chopped off the ends.  I then took a box grater and shredded it until I had 1 cup for the recipe.  

These muffins are delicious and disappeared WAY too fast!  I hope you and your kiddos enjoy these too!
